Lux Red (2023)

Description

This cuvée comes from the finest parcels of the Caritatis terroir, selected just before harvest for their particularly intense aromas, revealing the full potential of Ventoux: the Syrah grapes come from old vines in Clos des Sœurs and from the terraces of the Barroux winegrowers, chosen for their pronounced notes of red and black fruit.

The Grenache grapes, meanwhile, come from the southern clay-limestone terroir of L’Annonciation, opposite Clos des Sœurs, from the old vines of the monks, and from the terraces of the monks and winegrowers of Barroux and Beaumont, primarily on deep clay-limestone soils that give the wine richness, power, and the characteristic freshness of our mountain region.

Tasting

Beautiful, deep, dark color. An intense, complex, and elegant nose with notes of vanilla and licorice, and a hint of spice. The palate combines richness and creaminess, with well-structured and remarkably fine tannins. Aging in oak barrels imparts aromas of toast, gingerbread, and spiced bread. Rich, enveloping, and remarkably smooth and rounded. The finish is long and persistent, with great freshness.

FOOD AND WINE PAIRINGS
A perfect match for braised red meats, meats in olive sauce, or game, such as Chateaubriand with pepper, venison fillet, or doe fillet with pepper, or even a Provençal daube. It also pairs beautifully with grilled ribeye steak, roasted game birds, lamb with new garlic, rosemary, or thyme, as well as grilled pork ribs with candied figs, duck breast, or veal shank with tomato. For a vegetarian option, try it with mushroom risotto or herb-roasted eggplant.

Vinification

Harvested by hand and rigorously sorted, the grapes retain only the healthy and perfectly ripe berries. Traditional vinification takes place in concrete vats with a 25-day maceration without stems. Extraction is carried out by racking at the beginning of fermentation, followed by gentle pump-overs to avoid harsh tannins.
After malolactic fermentation, 80% of the wine is aged for 18 months in concrete vats, while the remaining 20% ages for 18 months in 500-liter Seguin-Moreau oak barrels. The blending of the vat-aged and barrel-aged wines is done shortly before bottling.
