This wine comes from the plot "Clos de l'Annonciation" (which is the enclosed ground of the Nuns) in the lieu dit "La Font de Pertus". This plot is facing the south and in altitude (1350 feets above see level). The name "La Font de Pertus” means "the thousand springs" because there is a lot of water seeping from the mount Ventoux at this place. This unique plot provides to the grapes sunny days, cool nights and always
sufficient water even in dry years. This wine also contains a selection of grapes of the plot "Saint Joseph" at the bottom of the monks' abbey. This plot is also in altitude (1300 feets above see level) facing the north. The soil is dryer and the vines are planted in high density (8000 feet per hectare). The high density enables a competition between the vines and forces the roots to plunge very deep and to get the terroir effect.
